Sample retreat menu 

Breakfast

  • Uchimama granola with seasonal fruits, yogurt, medicinal mushroom powders.
  • Porridge with seasonal fruit compote, yoghurt. 
  • Homemade overnight fermented seed and nut loaf with various toppings like homemade nut butters, avocado salad and spices.
    Japanese style congee with tamari soaked eggs, umeboshi, shallots, toasted seeds.


Lunch

  • Rainbow rice paper rolls, baked pumpkin whipped cannellini beans.
  • Grilled salt cured salmon, greens, rice and miso soup.
  • White fish honey glaze with chilli coconut and Asian slaw.
  • Cherry tomatoes and summer vegetable baked rice, salad and zucchini and fennel braised in saffron.

Dinner

  • Eggplant and tofu teriyaki with rice, green salad and miso soup
  • Buddha bowl of marinated tempeh, stewed beans, ferments and brown rice.
  • Beef cheek Japanese curry with rice and veggies
  • Kitchari with salad and roti.
    Karaage chicken, greens, pickles and rice.
